Fish is considered to be a source of Omega 3, which is good for the heart. In this recipe, you will be using a delicious kind of fish called Mahi Mahi. This particular fish is also very nutritious as it is a good source of Potassium, Niacin, Vitamin B6 and Selenium. In cooking, always choose fresh and quality fish. For Mahi Mahi, it should not smell fishy and the fillets should be moist. To ensure freshness, keep the fish cool when you buy them until you reach the house. Do not remove it from the refrigerator for a long time. Cooking this dish is very easy. It may be served in parties or in a simple dinner with family or friends. This recipe serves 4 people.
Ingredients:
- 2 pieces of bay leaves
- Half bulb fennel
- 6 cloves of garlic
- 1 inch ginger
- 1 whole lemon
- 1 whole lime
- 4 pieces of boneless Mahi Mahi, approximately weighing 8 oz. each
- ¾ c of olive oil
- Half red onion
- 1 whole orange
- 12 pieces of black peppercorns
- ¼ c of soy sauce
Procedure:
- Get a large bowl and put in the ¾ c of olive oil and ¼ c of soy sauce.
- Cut the orange, lemon and lime in half and squeeze them in the mixture.
- Add the 12 toasted and crushed black peppercorns and 2 bay leaves. Slice the half bulb fennel, red onion and garlic thinly. After which, put them in the marinade as well.
- Next, peel the 1 inch ginger and slice it thinly. Add this also with the other ingredients and mix them well.
- You can then start preparing the grill by greasing it.
- In approximately 20 minutes before serving the dish, soak the Mahi Mahi in the marinade. Let the fish stay for about 10 minutes, while you turn them once in a while.
- After which, you can grill the fish for about 4 minutes in one side and 2 minutes on the other. Make sure that the grill is about 4 to 6 inches above the fire. The secret in cooking Mahi Mahi is not to overcook. You will know if the fish is ready when the meat turns opaque while the inside is still moist.
- Serve hot and fresh.
