How to Cook Red Beans?

There are many ways on how to cook red beans, but here’s a great recipe to start with. Here you will cook red beans that can be bought in the supermarkets in cans. The ingredients that you will need are as follows:

  • 1 pound dried or 6 cans of Red Beans, 15 oz.
  • 1 onion, medium size, chopped
  • 1/2 bell pepper, diced
  • 3 stalks celery, diced
  • 3 cloves garlic, diced
  • 1 tablespoon dried parsley
  • 1/4 cup green onions, chopped
  • 1-2 “X2” piece of Salt Meat
  • 2 links smoked sausage, optional
  • 1 can of tomato sauce, 8 oz.
  • A pinch of Thyme
  • A pinch of sugar
  • 2 bay leaves
  • 1/2 teaspoon Worcestershire sauce
  • Creole seasoning for flavoring
  • Salt and black pepper to taste

After you’ve prepared your ingredients, it’s time to learn how to cook red beans. Follow these steps to get started.

  1. This is step is only needed if you are using dried red beans.
    1. Rinse well and remove rocks or dirt.
    2. Next, soak them in cold water until they soften.
    3. Once plump, drain the water.
    4. Transfer the soaked dry red beans in a pot.
    5. Cover it with water until about half an inch over the red beans.
    6. Cook for an hour at slow rolling boil.
    7. Just make sure to check back to maintain water at the right level. You may need to add more water from time to time.
    8. After an hour, remove the beans from the pot and drain.
  2. In a skillet or wok, sauté the onions and salt meat under medium low fire.
  3. When the onions turn a bit light brown on the edges, add the garlic, celery, green onions, and bell pepper. Cook for five more minutes.
  4. Next, add in the tomato sauce and cook until it slightly scorches as you continuously stir the mixture.
  5. Now, it’s time to put the red beans in the pot.
    1. If you are using the canned beans, just open it up and place in a pot.
    2. If you are using dried beans, you will have to place back the drained beans in the pot.
    3. Fill up with fresh water to cover the beans.
    4. Bring to a boil.
  6. Once the water boils, add the sautéed vegetables and salt meat into the beans.
  7. Deglaze the pan you used in sautéing and add the liquid to the pot of beans.
  8. Add the rest of the seasonings except for parsley and salt.
  9. If you are using sausages, cut them in bite sized pieces and add to the pot.
  10. Add the parsley and continue cooking under medium low heat.
  11. If the liquid dries out, add more such that they are covered in liquid.
  12. Cook until the beans are tender or until you see the shells of your red beans start to split.
  13. When the shells split, this means it’s done.
  14. Get a spoon and slightly mash a few of the beans on the side of the pot to make the dish a bit creamy.
  15. Now add the salt to taste.
  16. Serve this on top of hot rice. Enjoy!
