How to Cook Pork Hocks?

Pork Hocks with Sauerkraut

The ingredients are celery seed, 2 to 4 medium to large onions, 1 c. plus sauerkraut juice and water, 3 c. sauerkraut and 6 to 9 pork hocks.

Put the hocks in a casserole dish (3 quarts). Add the sauerkraut and pour water and juice. Top it off with some onions. Spray some celery seed on it. Put the dish cover on and cook for 350 degrees for four hours. This may be served with horseradish and some sharp mustard.

Hocks with Greens

The ingredients are 8 small white potatoes, peeled, pinch of sugar, 1 tsp. salt, 3 lbs. collard greens, 6 c. water and 2 smoked pork hocks. Put the hocks in a 6 qt saucepan. Pour all the water into it. Put the cover on and bring to boil. Set to low heat and let it simmer for 90 minutes. As you learn how to cook pork hocks, always keep track of the cooking time.

While it’s simmering, cut off the collard greens stems. After washing the leaves, cut the leaves into bite size chunks. Do this by combining the leaves and cutting in 1/4 in strips. Toss in some potatoes, sugar, salt, fresh greens with the hocks. Cook for half an hour. Chop the pork into one inch pieces. Mix the pork with greens. Add some potato toppings.

Stewed Hocks

The ingredients are cabbage or greens, potatoes and hocks. Pour some boiling water over the hocks. Let it simmer for 3 hours. Toss in the potatoes during the final 30 minutes of cooking. If you want to add other vegetables, do it now.


Hocks can be cooked two ways: finishing in an oven or cooking in stoves. When you are purchasing hocks, find the meatiest ones possible. On the average, a couple of meaty hocks are sufficient for 2 to 4 people.

There are also smoked hocks available. This is the option if you want a ham flavor to your meals. If there are hairs on the hocks, just singe them off. Top do this, light a candle and place the “hair” close to the flame. This will remove the hairs.
